THE DOLLOP KITCHEN RECIPES

1. Rhubarb, Raspberry and Elderflower Eton Mess (serves 6)

Ingredients:

  • 1 Pot of Dollop Gourmet Fruits “Rhubarb & Raspberry with a hint of Elderflower” - 300ml Cream
  • Vanilla Essence
  • 1 Tsp Icing Sugar
  • 12 Meringue Nests

Method:

  1. Whip the cream until soft peaks form
  2. Stir the vanilla and icing sugar through the cream
  3. Roughly break the meringue nests up and split into 6 piles
  4. Place a third of each pile of meringue in the bottom of a tumbler or similar glass
  5. Place a few dollops of cream on top of the meringue
  6. Spoon over the Rhubarb, Raspberry and Elderflower Gourmet Fruits
  7. Repeat steps 4 through to 6 until all ingredients used up. Serve immediately.
